Hot chocolate chip cookies have got to be my favorite dessert ever. I seriously think that I could eat a pan of these by myself! I cringe at the cookies in the store, they look good but they are freaking expensive! Typically store-bought cookies are hard things that could be hockey pucks, I like my cookies soft and gooey! After discovering this recipe I just can’t buy dough in the tub or those trays of cookies anymore. Trust me, the short time that it takes to make these is well invested. Unless your on a diet, then its pretty much an exercise in self-destruction, because there is no way your going to make these and eat just one of them. Oh yeah, make sure that you have some milk in the fridge too.
While these are simple cookies to make there are some things that you need to know before you run in the kitchen and get started. I’ve made these enough to figure out all of the pitfalls that will lead to less than stellar cookies.
Softened Butter. Not straight from the fridge and not melted. You can soften it in the microwave, but don’t melt it!! Softened butter and melted butter produce different results.
Eggs. Take them out before you start anything and let them warm up. This goes for pretty much any recipe that calls for eggs. Room temp works better than cold.
Flour. I won’t go into what kind of flour to use here. But I will say this, the recipe calls for 2 1/2 cups but you may need more. Why? Well it all depends upon the humidity in your house, the moisture in the sugar, exactly how large the eggs are, and how precise you measure everything. After combining the wet and dry ingredients you are going to have to decide if your dough is well doughy enough. I have added as much as 1 cup extra to this recipe before. Typically I add between 1/2 and 1 cup extra. If you have ever made cookies from scratch and they were super flat, you didn’t have enough flour in the recipe. Yes I too was floored when I finally figured this out!
Cooking. Let the oven pre-heat thoroughly. These cookies cook quick, and putting them in an oven that isn’t fully pre-heated won’t produce a good result. 9-10 minutes, that’s all they need. They won’t look done, that’s OK. They will finish cooking after you take them out. You can adjust the time depending upon how you like your cookies. If soft and gooey is your take 9-10 minutes will do it. If you want them crispy 12 minutes or so.
Enjoy!
