Yup, home made noodles I must have lost my mind. Actually they were not as difficult as I had thought they would be.
Eggs, water, salt and flour. It really is that easy! I used a mix of semolina and all purpose flour, either way will work just fine.
After the dough is well combined cover it with plastic wrap and let it rest on the counter for 30 minutes. It can stay out for a few hours and be fine. You can make the dough ahead and refrigerate it. Just be sure to let it come to room temp before rolling out.
After its rested get you mini helpers to roll it out. We found it easier to roll out a small portion to a flat piece then use the KitchenAid Pasta roller. You don’t have to have one of these at all, it does make it easier though.
The pasta dough takes more effort to roll out than other doughs. Be sure you keep it floured so that it does not stick to your rolling pin.
We used this recipe to make homemade pasta noodles for lasagna and it made for an excellent dish. For lasagna cut the noodles to the length of your pan and the width so that you don’t have too much overlap. For noodles cut them in the desired width with a sharp knife or pizza cutter.
Keep and eye on the thickness of your noodles. Too thick and they will take longer to cook and can almost be doughy like a dumpling.
And just like that you have made your own homemade pasta noodles. Certainly not as difficult as you thought I hope.
Homemade Pasta Noodles
Ingredients
- 6 ea eggs
- 6 Tbsp water
- 1 tsp salt
- 4 1/2 cup flour Semolina or All Purpose
Instructions
- Mix eggs, water and salt until combined.
- Mix in flour until a dough forms. Mix until smooth and not sticky.
- Cover and let rest for about 30 minutes.
- Roll dough out into desired thickness and cut. Thinner is better otherwise you will have dumplings.
- Dust noodles in flour to keep them from sticking. They can be laid out on wax paper until it's time to cook them,
- For lasagna, the noodles are ready to use. Other types can be boiled as you normally would. Fresh noodles don't take long to cook. Enjoy!

I’ve never attempted homemade noodles in my life. At 63, I decided to give it a whirl, and wow, I was so surprised that my lasagne turned out so delicious using this recipe for the noodles. I kept them in large rectangles to cover my 9×13 pan and did not have to preboil them prior to baking my lasagne. I don’t have a pasta roller, so I just used a rolling pin and knife, but everything came out beautifully and quite tasty! My husband is so impressed and said it was the best lasagne I’d ever made!
