This Sweet Basil Pasta Salad is one of my go to side dishes during the summer. We grow lots of basil usually and are always looking for ways to include it in a meal. That combined with kids who always want to eat pasta makes it an ll around winner!
This simple Sweet Basil Pasta Salad is quick to put together and easily adaptable to picky eaters in the group. The kids don’t always want everything that we like in our dishes so alot of times we have to leave the goodies like onions and peppers on the side. Its just easier than listening to them complain about all of the extra flavor that I have added !
The base of the Sweet Basil Pasta Salad is the the Sweet Basil Dressing that recipe can be found here. Combine that with your favorite pasta shape, fresh cherry tomatoes, olives, onions, peppers and some feta and there ya go!
Sweet Basil Pasta Salad
Ingredients
- 1 pound pasta
- 1 pint cherry tomatoes, sliced
- 1 1/2 cups crumbled feta
- 1/2 cup red onion, diced
- 1/2 cup roasted red peppers, diced
- 1 1/2 cup Sweet Basil Dressing
Instructions
- Cook the pasta according to the directions. Rinse the pasta in cold water and then mix with the Sweet Basil Dressing.
- Combine pasta with red onions, olives, roasted red peppers and feta.
- Refrigerate the pasta salad to allow the flavors to combine. Stir again prior to serving.
- Garnish with fresh basil or a drizzle of the remaining dressing.
