Who doesn’t like baked beans? They are the staple of just about every cookout, pot luck and church get together. They go with just about anything that you can grill so that makes baked beans the perfect summer side dish.
The Best Damn Baked Beans evolved from a recipe that one of my dad’s friends used to make when we would go fishing. Anyhow, I can’t stand the blab in most recipe’s out there so I won’t do it either!
Start by browning some breakfast sausage. Jimmy Dean regular or any other variety that you like. While that is cooking mince an onion and green bell pepper.
Let it all cook until the onions are pretty translucent. Then add in the brown sugar and mustard. Just regular ole mustard, nothing fancy. If this thought just makes you gag skip it, but it does add a layer of flavor to make them the Best Damn Baked Beans!
Next toss in the drained, diced pimentos and mix together. The same ones that you would make pimento cheese with. They are a unicorn at the grocery store for some reason and usually live on the shelf near the mushrooms rather than with the peppers. Who knows why. You could sub in a minced red pepper or any other pepper that you like. If you get froggy and add something spicy like chipotles which would be amazing, start with a little and go from there. 1/2 cup of diced chipotles and you could be making napalm.
Somewhere along the way open the pork & beans and drain them of excess juice. I typically dump them in a colander when I start cooking the sausage then they are ready when I need them. Nothing crazy, just getting rid of the excess juice. If you want soupy beans don’t drain them.
Yes pork & beans. Not navy beans or kidney or anything else. Pork and beans are usually white beans that have been cooked with seasoning and are softer than the plain beans. If you use something else you will have to adjust your cooking time based up on the doneness you want in your beans.
Put the lid on and let them simmer on low for about an hour. Check them and give them a stir. If they look too dry then add a little water and turn them off.
There ya go. The best damn baked beans. Wait, we didn’t bake them! If you really have to bake them rather than simmer them you can. About an hour at 300 should do the trick. Just make sure that your pot is oven safe.
The Best Damn Baked Beans
Ingredients
- 3 cans pork and beans drained
- 1 ea green bell pepper minced
- 1 ea onion minced
- 1/2 cup diced pimentos drained
- 2 Tbsp mustard
- 1 cup brown sugar
- 2/3 lb breakfast sausage
Instructions
- In a large pot brown the sausage and break it up as it is cooking.
- Mince the onion and green pepper. Add these to the sausage about half way thru cooking and cook until the onions are translucent.
- Open and drain the pork & beans in a colander. There is no need to rinse them, just allow the excess sauce to drain away.
- Add the mustard and brown sugar to the sausage and mix to combine.
- After the sugar is melted and combined add the beans and drained diced pimentos. Bring to a simmer.
- Allow The Best Damn Baked Beans to simmer on low for about an hour for the flavors to combine. Be sure to stir them every now and again. Enjoy!
