Enchiladas!

Enchiladas, mexican comfort food. They don’t have to be complicated to be good. Ground meat, tortillas, cheese and enchilada sauce. That’s it.

Saute 2 pounds of ground meat. I went with ground beef but you could also use ground pork or turkey if that’s your thing. Be sure to drain the meat if its needed.

Stir in one can of enchilada sauce and mix well. Top with 4 ounces of shredded cheese and combine.

Mmmmmm cheesy enchilada meaty goodness.

Roll up your enchiladas and cover them in sauce before they go in to bake.

Oh look, more cheese!

About 25 minutes in a 350 oven and you have a bubbly yummy mexican comfort food dinner.

Ingredients

  • 2 lbs ground meat
  • 2 cans Enchilada Sauce 28oz each
  • 12 ea flour tortillas
  • 8 oz Sharp cheddar cheese shredded

Instructions

  • Preheat oven to 350
  • Saute the meat and drain if needed. Stir in 1 can of enchilada sauce and mix well.
  • Add 4oz of shredded cheddar cheese and stir to combine.
  • Pour about a cup of enchilada sauce in the bottom of the baking pan.
  • Place meat mixture into a tortilla and roll up. Place into baking pan seam side down.
  • Continue to fill the pan. Pour the remaining sauce across the pan evenly.
  • Top with remaining shredded cheddar cheese.
  • Bake for 25 minutes until bubbly and the cheese is melted.
