Preheat oven to 350
Saute the meat and drain if needed. Stir in 1 can of enchilada sauce and mix well.
Add 4oz of shredded cheddar cheese and stir to combine.
Pour about a cup of enchilada sauce in the bottom of the baking pan.
Place meat mixture into a tortilla and roll up. Place into baking pan seam side down.
Continue to fill the pan. Pour the remaining sauce across the pan evenly.
Top with remaining shredded cheddar cheese.
Bake for 25 minutes until bubbly and the cheese is melted.
