I’m from the south, if you haven’t figured that out already. There are many culinary staples of the south, buttermilk biscuits, okra, collard greens, and today’s topic pimento cheese.
Pimento cheese is one of those staples that everyone’s grandmother always made. It is a simple cheese spread that compliments so many different things that i’m always finding new ways to include it!
This is a little different twist on a traditional pimento cheese but still has most of the expected ingredients in there.
See nothing too crazy in there. Well, I’m sure my mayo choice isn’t acceptable for many in the south but oh well.
Drain the pimentos and the green chilies. Just toss them in a small colander or sieve to sit while your getting the other steps done.
Step 1. Make sure the cream cheese is room temperature and easily spreadable. Step 2. Repeat step 1.
If the cream cheese isn’t soft it makes everything else difficult so take the time to make sure that it is room temp all the way thru. Combine the cream cheese, mayo and the spices. Make sure that they are well combined.
Add in the drained pimentos and the green chilies.
Stir to combine everything. Don’t go crazy and mash up the pimentos though.
Alright it’s time to get your shred on. You can use any cheese shredder that you like. The size of the shred will determine the texture of the final green chile pimento cheese. The finer shreds will make for a creamier cheese spread.
Cheese. Lots of shredded cheese!
Stir to combine everything well. Make sure that the cheese shreds are all broken up and coated with the creamy base.
Now the hardest part. Put it in the fridge and let it sit there for a couple hours. If you survive this self torture you will be rewarded with a great green chile pimento cheese! IF you just can’t wait that long, I get it. It does get better if you let the flavors combine though.

Pimento cheese burger
Pimento cheese tacos or quessadillas
With a spoon lol.
Green Chile Pimento Cheese
Ingredients
- 4 oz cream cheese softened
- 1/2 cup mayonnaise
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp white pepper
- 4 oz gouda shredded
- 4 oz extra sharp cheddar shredded
- 4 oz diced pimentos drained
- 4 oz diced green chilies drained
Instructions
- Drain the pimentos and green chilies. The liquid can be saved for another use or discarded.
- Soften the cream cheese. It needs to be room temperature and easily spreadable.
- Combine the cream cheese, mayo and spices and combine well.
- Stir in the drained green chilies and pimentos.
- Shred the cheese and stir to combine.
- Refrigerate to allow the flavors to combine for 2 or more hours.
