Green Chile Pimento Cheese

Ingredients

  • 4 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp white pepper
  • 4 oz gouda shredded
  • 4 oz extra sharp cheddar shredded
  • 4 oz diced pimentos drained
  • 4 oz diced green chilies drained

Instructions

  • Drain the pimentos and green chilies. The liquid can be saved for another use or discarded.
  • Soften the cream cheese. It needs to be room temperature and easily spreadable.
  • Combine the cream cheese, mayo and spices and combine well.
  • Stir in the drained green chilies and pimentos.
  • Shred the cheese and stir to combine.
  • Refrigerate to allow the flavors to combine for 2 or more hours.

Notes

Depending upon the size of your cheese shred you might want to add more cheese to obtain the consistency that you desire.
