Who doesn’t love spaghetti and meatballs? Well hopefully you will love these too. I took a different twist on them and added some mushrooms to the mix. The kids loved it! I also hid some lentils in there, don’t tell them they didn’t have a clue.
Saute the mushrooms to develop the flavor as well as reduce the moisture in them.
Dice the cooked mushrooms. I like the OXO chopper shown in the picture, you can find it here.
Saute the onions and green peppers.
There’s two ways to go here. One is mix the dry ingredients first, then mix that into the wet. The other is just toss it all in one bowl. Two bowls is probably a better way to go but as you can see it didn’t happen this time.
Now give it all a good mix. I usually start with a for but its just as easy to just get your hands in there and go for it.
Mix everything up and get to making those mushroom meatballs. I made them about 1.5″ across but you can do whatever works for you. Smaller ones will cook faster.
I like to brown my mushroom meatball but you could skip that part if your in a rush.
After getting them all browned they go in a 9 x 13 dish to hit the oven. I put some extra green pepper in there as well.
Cover the mushroom meatballs with your favorite Mariana or tomato sauce and bake for about 45 minutes. You could also top them with mozzarella cheese in the last few minutes if you like. Because face it, cheese makes everything better.
Grated Parmesan and noodles and there ya go, its dinner!

Ingredients

- 1 lb ground beef
- 1 lb Italian sausage
- 1 can Mushrooms 8 oz can
- 4 cloves Garlic minced
- 1/2 ea Onion minced
- 1 ea Green Pepper minced
- 2 ea eggs
- 1/2 tsp Basil
- 1/2 tsp Oregano
- 1/2 Tbsp Worcestershire Sauce
- 1 tsp Paprika
- 1 Tbsp Parsley
- 1/2 Cup Lentils cooked
- 1 Cup Parmesan Grated
- 1 Cup Bread Crumbs
Sauce
- 1 can Diced Tomatoes
- 1 Jar Marinara Sauce

Meatballs
- Drain the mushrooms and then place them in a pan over medium heat to saute them. After about 10 minutes, remove them from the heat and allow to cool. Chop the mushrooms to fairly small pieces.
- Saute the minced onions and green peppers.
- Combine the bread crumbs, cheese and spices.
- In a large bowl combine the meat, eggs and all other ingredients.
- Mix the dry mixture into the meat and stir to combine well.
- Form them into meatballs. The size is up to you, smaller ones will cook a bit faster if your in a rush.
- Sear the meatballs to give them a crust prior to placing them in the oven. This is optional but gives a nice bit of texture to the meatballs.
- Place the mushroom meatballs into a baking dish and cover with diced tomatoes and marinara sauce.
- Bake at 350 for about 45 minutes.
