Roasted Mexican Party Corn

A simple and tasty corn dish .

Ingredients

  • 2 packages frozen corn prepared per package
  • 1/2 ea green pepper diced
  • 1/2 ea red pepper diced
  • 1/2 ea red onion diced
  • 4 oz feta
  • 1/2 cup cilantro chopped
  • 1 Tbsp lime juice
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tsp paprika

Instructions

  • Cook the frozen corn according to the package. Drain in a colander.
  • Roast corn in a pan with olive oil, butter or grease until golden in color. Stir frequently and watch for burning.
  • Dice peppers and onion and set aside.
  • Remove corn from pan and allow to cool to room temperature.
  • Combine mayonnaise, sour cream, lime juice and paprika. Mix with cooled corn.
  • Combine corn with all other ingredients. Chill until you are ready to serve so the flavors can combine. Garnish with cilantro and enjoy!
