Roasted Mexican Party Corn
A simple and tasty corn dish .

- 2 packages frozen corn prepared per package
- 1/2 ea green pepper diced
- 1/2 ea red pepper diced
- 1/2 ea red onion diced
- 4 oz feta
- 1/2 cup cilantro chopped
- 1 Tbsp lime juice
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp paprika
Cook the frozen corn according to the package. Drain in a colander.
Roast corn in a pan with olive oil, butter or grease until golden in color. Stir frequently and watch for burning.
Dice peppers and onion and set aside.
Remove corn from pan and allow to cool to room temperature.
Combine mayonnaise, sour cream, lime juice and paprika. Mix with cooled corn.
Combine corn with all other ingredients. Chill until you are ready to serve so the flavors can combine. Garnish with cilantro and enjoy!
