Cauliflower Pizza crust

A simple pizza crust that swaps flour for cheese and cauliflower to deliver a unique low carb option.

Ingredients

  • 1.5 lbs frozen riced cauliflower
  • 1 tsp salt
  • 4 ea eggs
  • 1/2 lb mozzarella cheese shredded
  • 1/4 cup parmesan cheese grated
  • 1/2 cup cheddar cheese shredded
  • 1 tsp garlic powder
  • 2 tsp oregano dried
  • 2 tsp basil dried
  • 1/2 tsp Xantham Gum

Instructions

  • Heat the oven to 450.
  • Cook the cauliflower per the package instructions. Wrap the cooked cauliflower in a towel and press to drain excess water. A clean dish towel will do just fine. Remove as much water as you can for a crisper crust.
  • Mix eggs and all other ingredients while the cauliflower is draining.
  • Stir in the cauliflower to combine. Mix well.
  • Line a sheet pan with parchment paper.
  • Take about 1/2 cup of the mix for an individual crust. More if you want a larger pizza.
  • Spread it thin on the parchment paper. Use a spoon to spread it out. to keep it from sticking to your fingers.
  • Bake for about 15 minutes. The crust should be golden brown, it will not rise like a typical flour based crust.
  • Add your favorite toppings and bake for about 5 minutes until your cheese is melted.
